Brunch Thyme To Open In Brooklyn Arts District This Week

Brunch Thyme, the latest venture for On Thyme and Glizzies owners Corey and Phallin Scott, will open this week.

The take-out-only brunch eatery located in the Brooklyn Arts District at 1124 N. Fourth St. will officially open its doors at 7 a.m. on Friday.
 
“Brunch Thyme is a cool swing on breakfast food but in an ‘On Thyme’ way,” Corey Scott said. “This will be our first edition of Brunch Thyme, and we will soon do a bigger spot with lots of fun, exciting activities while you eat.”
 
Brunch Thyme will offer patrons unique takes on typical brunch fare. There will be “some of the traditional menu items and some of the twists we came up with,” Corey Scott said. 

“We wanted to give Wilmington a taste of flavor in a different way.  We’re very excited about our chicken and waffles offering two cool options,” he said. “One is a peach cobbler chicken and waffles where we will have a cream peach purée topped with fresh cinnamon peaches and shortbread cookies. Also, our southern grits topped with a savory turkey bacon gravy and your choice of protein, either fried or grilled shrimp, fried fish, fried salmon bites or grilled salmon bites.”
 
Though menus will vary greatly between On Thyme and Brunch Thyme, some On Thyme favorites will be reimagined into brunch items. Favorites like On Thyme’s Philly Egg Rolls, for example, could turn into breakfast egg rolls with ingredients like bacon and eggs. However, Brunch Thyme’s official menu has yet to be released.
 
One thing is sure, Wilmington residents and visitors have shown their support for the family of businesses the Scotts have created, and the Scotts hope Brunch Thyme will thrive like the others.
 
This isn’t the first time Corey and Phallin Scott have been ahead of the curve with new flavor profiles and it certainly won’t be the last. “We’re here to change Wilmington and give it that spark it needs in the food world,” Corey Scott said. “Good food, good laughs and just good people.” 
 
Brunch Thyme will be open for take-out and delivery. The restaurant will be open Tuesday through Saturday from 7 a.m. to 2 p.m. with plans to add Sunday hours soon. More information can be found on Brunch Thyme’s Facebook page.
